INGREDIENTS
2 Salmon filets
1 1/5 cups of Cooked Rotini Wheat Pasta
3/4 cup of chopped Green Bell Pepper
1/4 cup of Red Onions
1/4 cup of Shredded Carrots
Olive Oil
1 tsp. of Black Pepper
1/5 tsp. of Cajun Seasoning
1 Tbsp. Honey
1 1/5 tsp of Yellow Mustard
2 Tbsp. of Sriracha Hot Chilli Sauce
INSTRUCTIONS
Lightly coat small frying pan with Olive oil. Add a dash of black pepper to oil. Add thawed salmon filets and additional pinch of black pepper to salmon. Fry on MED/LOW heat, covered, flipping filets midway through cooking time (aprox. 6-10 min on each side depending on preference).
Lightly coat medium sized saute pan or wok with Olive oil. Bring to MED or MED/LOW heat. Add all of the pasta, green peppers, onions, honey, yellow mustard, cajun seasoning, and chili sauce. Let simmer for about 10 mins/until the sauce has thickened and pan is almost dry. Stir every other minute. Right before sauce is almost dry, add carrots. Stir to thoroughly incorporate with pasta, veggies and sauce.
